SWISS CHARD right from the garden
Jul 10 '00
O my goodness a friend gave me a package of Swiss chard seeds she did`nt need. I planted every last seed. Now I got Swiss chard coming out of my ears. time to call the neighbors to come help them selves. I remember as a kid my Grandmother
always made greens from lots of different green plants. She passed away in 1949 so can`t ask her what to do with it, and my Mom is 87 with Alzheimer`s so i`m on my own to come up with something to do with it.
First pick it by breaking each leaf off near the base of the plant, same as you would pick lettuce so the plant can keep on growing.
To serve 4 you need about 1 1/2 pounds.
Trim ends and damaged leaves.
In large pan or (salad washer) fill with water wash by lifting in and out of water about four times. Sand will sink to the bottom.
Cook covered, using only the water that clings to the leaves after washing, cook for 3 to 4 minutes or until tender. Older greens will take longer then young greens.
drain and serve.
Serve with butter, salt and pepper.Vary with dash of vinegar or lemon juice.
