No Dinner Denial Tonight!

They have found me. No matter where I have gone to avoid them, the lengths I have taken have failed. I can no longer live in denial...
It's dinnertime.
"Mom! Mom are you down there? Mom! Mom! Mooooooooooom!"
I am in the basement trying to pretend that I truly enjoy folding endless mountains of clothes...
"Yes, I am down here! What's up?"
I hold my breath...
"What are we eating tonight?"
Rats! They remembered earlier than I had predicted. But it is all right! I am prepared! Bounding up the steps, swinging around the corner, I announce...
"Why, we are having everybody's favorite! Sloppy Nachos!"
Cheers, applause, confetti.
Okay-maybe not the confetti.
The cheers are not just from the kids, but exuding from me as well. Sloppy nachos is the easiest meal that my family shares together. We all (ages thirty-something to five years old, can just about not get enough of it! It's incredibly versatile, child friendly and tasty. Even the little ones can take part helping making dinner when its Nacho Night!
Here is the basis to this meal. All you need is...
1 cup of any brand Sloppy Joe sauce to every pound of hamburger
1-12oz. jar of any salsa
Cheddar Cheese or a good, sharp blend; grated
Corn Tortilla Chips (our family of 9 uses one large bag)
Just brown that hamburger and drain it! Then add the Sloppy Joe sauce and salsa, simmer a few minutes and you are good to go!
First put your desired amount of chips on the plate, top with the meat mixture, then cheese! It's very good just like that if you are in search of the simplest way to eat it! But the fun is in the toppings! How about...
Sour Cream (a must)!
Fresh, chopped tomatoes
Black Olives
Jalepenos
Green Peppers
Fresh Onions
Anything you want! Sometimes we find a lot of toppings hiding in the cabinets and we put everything out for the kids to create their own! They love it!
And I am loving it too...because it just doesn't get much more simple than this!
