Quick and Easy Chicken Quesadillas

I love trying new recipes and throwing together some of my own. I will eat almost any kind of food out there, however mexican food is one of my favorites.
I have always loved quesadillas, so one night I had some extra flour tortillas and chicken fajitas left over. I always have cheese on hand, so I decided to try making some of my own. I was in a hurry, so it had to be quick. The following is what I came up with and it only took me about 30 minutes to make.
2 cups chicken fajitas(cut-up into bite size pieces)
8 flour tortillas(burrito size)
2 cups shredded Cheddar cheese
2 tomatoes(cut-up into small chunks)
1 bunch cilantro
1 jalapeno pepper(seeded)
1 small onion
2 medium size avacados
1 8-oz container sour cream
2 Tbsp. vegetable oil
garlic salt(to taste)
1. In medium size skillet heat 1 Tbsp vegetable oil.
2.Combine chicken fajitas, onions, and jalapeno. Add to skillet when oil is hot.
3. Cook for about 5-10 minutes or until the onions and jalapenos are soft
4. Add tomatoes, garlic salt and cilantro to skillet. Cook another 5 minutes.
5. Remove from fire. Top 4 tortillas evenly with the mixture and cheese. Then top with each of the 4 remaining tortillas.
6. Heat 1 Tbsp. oil in skillet. Add 1 quesadilla. Cook 2 minutes, turn and cook 2 minutes longer until tortilla is lightly browned and the cheese is melted.
7. Repeat process until all are made. You may need to add additional oil until all are done.
8. Top with avacados, sour cream and salsa.
You can also make these with beef fajitas or even ground meat.
