Chicken Salad Supreme

Here's a delicious "chicken" recipe that I've served at party get togethers with friends. It's just too good to be this quick and easy! And an added bonus, it has never failed to win me lots of compliments! =)
Chicken Salad Supreme
3/4 cup mayonnaise
3 Tbsp. Dijon mustard
2 cup chicken, cooked and cubed
2 Tbsp. chopped pimiento
2 Tbsp. pickle relish
3/4 cup celery, chopped
1/2 cup pecans or walnuts
2 eggs, hard-boiled, diced
1 Tbsp. onion, minced
Combine mayonnaise and mustard. Toss dressing lightly with remaining ingredients. Chill.
Serves 4
You can serve as sandwiches or in a tomato cup on a bed of lettuce...
