CyndiA's Full Review: Bayou Classic 400-402 Charcoal Grill
The idea and theme are good. Bayou Classic is a fold up grill that is about the size of a laptop computer when folded which is about all it has going for it. Oh yeah. The price is nice too on this grill.
Now for the bad and ugly . . .
You fold out the Bayou Classic Charcoal grill, and you have a box with holes at both ends (so that it can fold up). Keep a water can handy in case your coals go east or west.
Once you get this seemingly handy tailage grill set up and get a fire going, stand back. Stand way back. The heat from the coals makes the thin metal buckle. When this things starts to ping and pang, then you do not know if you are going to have to duck flying coals or not. With the grates on, we hope not.
There are two grates. One goes almost on top of the coals. The other goes at the top of the grill - about 6 inches up. At the low level, you burn your food. At the higher level, you kind of lightly toast it - if that. If you take a lid from a grill like a Weber (like you'd really just carry that on a trip) and put it over top of the Bayou Classic, then you can use the top grate rack and maybe, hopefully, pray get your food grilled done.
I am a grill writer (Barbecue Master blog and Yes You Can Grill web site), and I DO KNOW HOW TO GRILL. It is possible to grill on the Bayou Classic fold up portable grill, but I'd just as soon find some rocks and make a fire ring if legal. If not, I'd sure hate to be stuck out with this grill that sounds like a good idea but will challenge even the best of the best of outdoor cooks. I got a couple of decent meals off it before retiring it. It's in my garage, and I really hate to donate it to Good Will, because someone may think they are just bad at grilling when it really is the design of the grill.
I rarely find grills that I don't cotton to. This is one of them. Not only is Bayou Classic hard to use, it's also hard to clean and rusts. Just as well I guess. I'd hate to be tempted to crank it back up and do another stress grill session.
