I love popovers! Who doesn't love popovers? What? YOU don't love popovers? Maybe you haven't tried Stonewall Kitchen Traditional Popover Mix, because if you try it, you will love it too!
Stonewall Kitchen is a Maine based company that sells all sorts of things for cooking and house care. These popovers are rich, airy, melt in your mouth tasty. Be warned, they are highly addictive. They have about 1/2 teaspoon of butter and 1/3 of an egg per serving, and they aren't over loaded with carbs (only 20 mg per popover, which is good if you have blood sugar issues).
It really is not that hard to make popovers from scratch, but I can't be bothered with such things (in other words, I'm lazy). For you Brits out there, popovers are like Yorkshire pudding, but you bake them alone in special cup shaped tins and you generally don't use lard.
The mix comes in boxes of 12.33 ounces. Each box makes 12 popovers, which is twice as much as I usually want to make, so I get my little kitchen scale out and remove a drop more than 6 ounces and save that for another occasion. Since most popover tins and muffin pans make 6 at a time, I think Stonewall Kitchen should have 2 6.15 ounce bags in each box.
The instructions for the full mix require 4 large eggs room temp.; 2 Tbsp. unsalted, melted butter; 2 cups water, at room temperature. Take that room temp stuff seriously, folks, it helps create the cool air pockets that make the popovers rise. As you can see from the ingredients you add to the mix, cutting the recipe in half is very easy. The popovers require some attention because you must change the oven temp after 20 minutes of baking, but you must not open the oven door or they will crash and be ruined! OH THE HUMANITY! It takes a lot of self control to not open that oven door.
Serve your popovers while they are still warm. They will be rich and tasty and fabulous with no accouterments, but I offer up butter, jam, or marmalade to spread on them like scones. I have yet to meet anyone who doesn't love these treats.
