When i first was looking for a scanner, i wasnt planning on paying over $150 but when i saw the Canon FB 1200S, i didnt care. I admit, it is a little pricy ($250) but it is amazing and definitely an over achiever. With an optical 1200x1200 dpi resolution and 36bit color, it produces scans of tremendous quality with amazing color depth.

When you buy it, it also comes with Adobe Photoshop 5 LE. Adobe is my all time favorite photo editor, you can do so much with it!
It also has a canon Plug-in for Win/Mac. Whether your scanning family photos to send to friends or transperancies to spruce up an office meeting, this scanner is top of the line with everything you need.
