I purchased the Matrox Millenium graphics card on advice and after checking reviews and comparisons on the net which suggested it would be my best bet as a compromise between good text quality (my priority) and high quality graphics. The text is fine (connected to an IBM G96 monitor). The graphics - incredible. I admit to occasionally breaking away from my work to play a flight simulator - I have had frame rates of almost 100 per second, running at 800 x 600, and with all the flight and ground texture etc. set to highest quality.
If you get the chance to view the card running, ask to see the Matrox demo that comes with the software - the 3D effect is unbelievable on what is a more-or-less flat screen - yet the frame rate is so high there is no sign of jerkiness.
I haven't tried to connect two monitors, and doubt I ever will, but this facility may be of use to some.
The only down side is that the card is a bit pricey - but not excessively, and it is worth it. I understand there are cheaper cards that are good at either text or graphics, but the Matrox shines at both.
