I don't about Baja but I know fresh when I taste it !

Pros: Clean, priced right, NO grease, and speedy for non pre cooked fare.
Cons: Not designed for lingering after-the-fact. Kind of a "turn and burn" atmosphere!
The Bottom Line: Baja Fresh has take mexican cuisine, non-traditionalized it, and made it seem traditional. Amd its very good. Cool huh?

I've only been to Temecula California's Baja Fresh restaurant, but it's always full of customers, always good and always clean!
There's no hiding the kitchen, it's the main focal point of the front portion of the restaurant, and it's clean as well as organized. The help seems to be working efficiently, and your individually prepared order never takes more than 5 minutes to receive. Which is ample time to enjoy the selection at the "something for everyone" salsa bar, and beverage bar too.The salsa bar features everything from mild to wild !
Interestingly, Baja Fresh prepares next to no dishes with cheese, typically a mainstay in mexican food. Sure the quesadillas have cheese, but I've not found another menu item with it! I don't have anything against cheese (or Wisconsin) but we all know cheese consumption should be limited, and at Baja Fresh I don't miss it. The food is tasty without it and very authentic. Also, they offer 2 types of bean dishes both lardless..traditional refried, as well as pinto style. Both good.
The tacos are served soft style, on steamed corn tortillas and are also quite good. The fish tacos (you read right....fish tacos) are good...different. I like them, but prefer the chicken and beef tacos. Get the plate that offers one of each and see what YOU think!
I don't think anyone will regret a meal at Baja Fresh, it's lean, tasty, the portions are good and you can see where your foods being prepared...it's a winner. But be prepared to have somewhere to go after you eat, because it's not a place you'll linger and relax.
