I've had the Sunbeam Bread Maker several months now. Each time I tried to make wheat bread it fell in the center and was hard. I used all fresh ingredients. So I stopped trying wheat and tried white. The white is fine, but it has a hard crust and dries out fast. APPRECIATE ANY SUGGESTIONS???? PLEASE HELP?? I'd like to have a nice, moist loaf of bread. This machine looks nice and is a good brand. Sleek, clean look to leave on counter top. I attempted 2 loaves and neither turned out. During the second loaf the machine shut down and would not turn back on. I was disappointed. The LCD is hard to read and the recipe book is very limited. Features several modes and buttons are easy to read.

Makes good bread and dough. However, I find I have to watch the corners for any dough build up. I usually just scrap the corners with a small spatula when it first start kneading just to make sure all the dough will be captured. Sometimes the kneading paddle bakes into the bottom of the bread. I find the paddle to be a little loose and comes off too easy. Other than that is does make good bread and I enjoy using it. Also the manual for this breadmaker is not very good at all.

I purchased this inexpensive bread machine from Walmart for about $40. It makes a very tasty loaf but I had repeated problems with the top of the bread collapsing. A few bread machine websites stated this problem is most likely due to too much water in the mixture. After repeated attempts with less water I could not get it to work right (it was okay with the 58-minute rapid bake cycle but the loaf comes out small and dense) so I eventually returned it. I was disappointed because I love fresh bread. If I do purchase another machine I may go with a Breadman unit since they seem to have good reviews on both Epinions and Amazon.com.
It looks like the Sunbeam 5891 is similar to a model by Betty Crocker and Oster. I would imagine these other bread machines have a similar problem. Actually, the www.breadinfo.com website reviewed the Oster 5838 and mentioned a common complaint with that model was the top of the bread collapsing. Perhaps I should have tried making a loaf with active dry yeast instead of bread machine yeast before returning it. If anyone has better results with the 5891 please submit a review!

This is my 2nd bread machine, and thus far I've been pleased. I make bread at least once a week. This unit is convenient, easy to use, and easy to clean. I am tweaking my recipes to prevent the dreaded collapsed top syndrome, but taste-wise and texture-wise the loaves I have made have been quite good. I always make sure to spray the inside of the kneading paddle and the pin on which it sits with a no-stick cooking spray so that the paddle slides out easily after baking. Otherwise, the paddle gets stuck and is a pain to remove from the pan. (It's important to remove paddles and clean them after each loaf, especially if you use milk or eggs in your recipes.)
What I like best: ease of use & cleaning, shape of loaves, machine's design (doesn't take up a lot of counter space), loaves pop right out of pan.
What I like least: The accompanying booklet could be better with the addition of a few more recipes and bold advice about lubricating the paddle and pin. I literally destroyed my old bread machine's paddle trying to pry it off after it became hopelessly stuck.
My husband bought me the 5891 for Christmas almost 2 years ago, and I absolutely love it. I bake at least one loaf a week (there's not much need for more than that with just the two of us).I've used almost all the settings on it (except for the jam and the sweet bread settings), and have had very few issues with any of the loaves I've made. The only real complaint I have with it is that when I've used the delay timer to make a loaf using the wheat setting, the loaf usually comes out a little shorter and denser than I'd like. But for the most part, I use the sandwich recipe that's listed in the manual, and my husband and I love it. I tell him on a weekly basis that this is one of the best Christmas gifts he's ever given me!

After making bread from scratch for many years, I decided to try a bread machine. I like the shape of the loaf and the ease of making it. I don't like the fact that I can't adjust the length of baking time. Even on the light setting the crust on the sides and bottom of the loaf turns out way too dark, thick, and crusty if I leave it in the required baking time. If I unplug the machine about 25 minutes early, it is about right for a 1 and a half pound loaf although the top is a little light. Because of this problem I have to be there to take it out early. If I can't figure out a way to solve this, I will probably get a better machine.

A very low-cost and easy-to-use bread maker. Ditch the recipe book that comes with it and go to Allrecipes.com and check out their section for Bread machine recipes. The bread I make is WAY better than the stuff that comes in a wrapper and WAY cheaper. A well-spent $36!

For the money , or any money cannot be beat. Have baked 30 lovely loves with almost no salt or sugar . It's best to watch the kneading process as different flours act differently . You can make fine adjustments by adding small amounts of flour or water .The breadmaker had a problem with heavy rye flour. The doughball was very heavy and jambed the machine .However tending the kneading resulted in some very good bread. I would strongly suggest staying near during kneading of unteasted flours.The machine had no problem with white or whole wheat flour for me. You want the dough ball to stick just a little to side so the paddle works it on each turn . Be sure to use quick rise bread yeast with program times . You have a bake option and a dough only option so you can play around with rise times if you like.

I had company coming for dinner expecting my home-made bread when my Breadman just quit. No time for an ordered machine. I ran around town looking for an immediate replacement. I found only one other bread machine of a brand I had previous problems with. I found this Sunbeam at Wal-Mart, cheap-$43.95, so I took a chance. I have used it for two of my specials-9-Grain cranberry and Kalamata Olive, Garlic,Rosemary.They were great! Not a crumb left!
I am not a beginner. The book lists times for various
functions which I used for adding ingredients. However a "beep" occured which I presume may be for additions however it is not noted in the book.
It does not have a backlight for the controls nor a light for the inside nor programmable additions but it is good for the price. I do not know how durable it will be.

I received this bread machine as a holiday gift, replacing my 15 year old Welbilt ($40 WalMart). So far I've used the whole wheat and sweet bread setting.s The whole wheat turned out OK the first time (based on my Welbilt recipe), but I had to punch it down towards the end of the raising. It did raise too much, so I cut back on the yeast per the instructions - turned out fine the second time.
The sweet bread turned out too dark, probably due to the amount of sugar (too much). Next one I cut back on the sugar and used the light setting - turned out fine.
The instructions do not say when to add fruit, but I assume it's when it beeps on the second kneading.
Relative to the Welbilt, the beater bar is a lot less intrusive and stays in the pan when you remove the loaf.
I have not tried the fastbread setting (don't like dense bread).
Pros: User friendly and easy to use. Makes a quality product for little cost. Cons: Holes in the bottom of my bread because the blade continually gets baked in.
Recently purchased this machine to try and offset the high costs of buying bread from the store. I have only made 3 loaves so far, and they have all turned out great. EXCEPT for the small problem of the kneading blade always gets baked into the bottom on my bread becoming stuck and creating a hole in the bottom of the final product. I read the owners manual front to back several times to try and find a solution for this problem with now luck. Does anyone else have this problem and is there a way to fix it?

In my opinion the durability of the Sunbeam 5891 is nothing short of terrible. After using this machine for about a year, it is completely worn out. The shaft bearing has deteriorated to the point that the shaft is now turning metal on metal. As the shaft rotates, it grinds up what appears to be a metallic goo that oozes up into the bread dough and out the bottom. It's disgusting, and I wonder if might even be dangerous. I've tossed the unit straight into the dumpster.

This machine is not the fanciest machine around by any means, but it is loaded with nice features that make it ideal for a person who's never used one before. A different setting for each type of bread (basic, sweet, french etc. I think there are twelve in all including the two quick bake options). It also lets you adjust cycle for 1.5 or 2 pound loaves. Also, the machine features three different darkness settings which work fine on my unit.
The machine is also very well styled and easy to clean.
Pros: Less than 1 hour bread time. I have to give it that one! Cons: Bread doesn't bake properly unless on rapid rise (for my machine anyway).
The Sunbeam_5891_Bread_Maker never worked quite right for me. This is my 3rd breadmaker. If only Hitachi hadn't quite making them! The only way I can get a good loaf is if I use the rapid setting and 3 packets of rapid rise yeast! ($$$) Any regular setting is sadly dense and over-cooked, no matter what I do with the settings, yeast amount, or any other ingredients. Forget using bread mixes anymore! I'm looking for a new bread machine, but I'm nervous now that I know that they can be so disappointing! I've been trying to make this one work for me for 3 years! The pan leaks now when soaking to get the darn paddle out!

I received a Sunbeam 5891 Breadmaker for Xmas and am very upset with it and my 1st loaf of bread from scratch. I made a 2 lb wheat loaf and it rose to the top and then some of the machine and what a mess to clean as the soft spongy bread clung to the window, over the sides and covered the bale so that it was impossible to get the tub out. I purchased all new proper ingredients and measured and added all as directed. I used bread flour, bread yeast purchased the day before. What went wrong? Please advise as one more try and it goes back to the store for a full refund. I have been baking for most of my 75 years on earth and finally got a bread machine for my family. I purchased this bread machine nearly two years ago because of the bargain price. Nearly a year later, I stopped using the baking cycles altogether since every loaf I made had a tough crust that my family shrunk from eating, whether the inside of the bread was right or not. I tried multiple types of breads, and Grape Nut bread was the only one that worked satisfactorily (still with semi-tough crust, but better than the rest). Now I just use the dough cycle for whatever breads I bake, knead and raise the dough for an extra half hour after the cycle is finished and bake it in a 375 degree oven for about 25 minutes. The crust is consistently thinner and softer and still has a good color.
Pros: Easy to use. Cons: Only lasted 3 months. Twice.
I bought this Bread Machine in June and it broke in September, so thinking it was a fluke I bought another one. I did love it. Now the second one broke after 3 months. Granted I do use it about 3 times a week, but really, it only lasts 3 months? I did keep my receipt this time, so I called and I have to send it to the nearest repair center and they will send me a new machine. I will be buying a better machine in the very near future.

Every loaf was extremely sunken even when I changed the liquid to dry ingredient ratio as suggested. I had my previous bread machine for twenty years making a loaf every day and never had a problem like this. I would never recommend this machine to anyone. I had to use a pliers to remove the beater from the post even after soaking it. One is supposed to use the wire handle on the pan to twist the pan to lock in place or to remove it from the machine but the wire bends without moving the pan. I used to enjoy making bread but using this machine has been very frustrating.
