When I saw the new Waring Pro in the Chef's catalog, I thought I'd finally found the fryer I've always wanted -- big enough to do lots of french fries in one batch. What I got was a home appliance designed by someone who's never used one.
First, it consumes 1800 watts, so if you plug it and anything else into a standard, 15-amp outlet, the circuit breaker will trip.
Second, the vents in the cover are located right next to the controls. So, if you attempt to touch a control while frying, your fingers will be scalded by the steam.
Third, though it holds a full gallon of oil, the frying basket is surprisingly small. Because the heating element is submerged in the oil (rather than below the oil container), the basket is much shallower than you'd expect. And, do you have any idea how long it takes to drizzle a full gallon of used oil through a filter?
I hate to return things, but this turkey was just too much to tolerate. It went back.

Well Made but poor temperature control

I have only one complaint but it is an important one. The temperature control is mechanical and not accurate. When I purchased the unit, I added fresh vegetable oil and let it heat up to 350 F degrees. I then inserted a professional candy thermometer into the oil and it only registered 305F. I then turned the fryer up to 375F, waited until the ready light went on and then tested the temp again. This time the fryer only registered 335F. I waited 15 minutes more and the temp never went higher. I have returned the fryer and purchased the Euro Pro. Even tough all the reviews on this site claim it is not a good unit, I suggest you check it out personally. It has 1800 Watts, like the Waring Pro, is just as well made, but has a solid state temp control. I found the temp to be accurate within 5F and it definitely got up to 375F which is vital to good, greaseless frying.

NOT a Professional Fryer!

Pros: Possibly good for a few very simple items, like appetizers.
Cons: Oil cools down immediately and recovery rate is slow so the food absorbs oil.
The Waring Pro is promoted as a professional deep fryer capable of handling more than 3 pounds. This is laughable! Three pounds of what?

This fryer is a total light weight capable of frying only the most delicate of food items such as a few shrimp, veggies, or a donut or two. Tempura is not recommended as the batter must be chilled to such a low temp the recipe will fail completely due to it's poor temperature recovery rate!

It will not cook a basket of chicken without it absorbing too much oil and rendering it inedible. It will only fry a batch of French fried potatoes in proper 2-step fashion for about 1.5 servings and will take forever to do so, thus your timing must be precisely recalculated after considerable practice.

I was a little apprehensive to purchase this at first, due to the price $129 (at Williams Sonoma). After reading the reviews, however I decided to buy. I gave it a real workout when I got it home, making 120 Crab Rangoon, and 200 chicken wings in preparation for a party. The temperature recovered quickly between batches, and after all of that cooking - the oil only went down 1 inch! It cleans up easily, and I love the fact that the oil well comes out for washing. Very well designed, it's a workhorse!

I had this deep fryer for about a year now. I don't deep fry a lot but each time I use it it seem to just barely get the job done. The other day when trying to make potato chips, which should only take 2-3 minutes but took close to 6-7 minutes a batch I decided to check the temperature with a candy thermometer. At the base where the heating coils is the temperature was only 320 degrees, however the level the food was at was only 305 degrees. This was at the 375 degree setting. Maybe I just have a faulty machine, but mine takes a good 10 to 15 minutes to warm up. I can't imagine trying to make 3 pounds of anything in this for two reasons 1- The basket just couldn't hold that amount 2- even if it did the temperature drop would be so dramatic that the food would just suck up the oil. Basically if a deep fryer can't get to at least 350 degrees its useless. What a waste of $129.00!!

Pros: large capacity - easy to clean
Cons: safety feature a little too severe
Were very excited about this fryer - cleaned it up, filled with oil (even had to run to the store for more oil), THEN tried to turn it on - it's got this feature where the control has to be "seated" just right on it's holder or it won't turn on. Needless to say, my wouldn't set right. I was able to rig it with toothpick for the one use and french fries were quite tasty.
Took it back to Williams-sonoma and before going home w/ another, we opened it up and checked to see if its control panel would set right - and, no, it wouldn't either - just a tiny bit off, but enough so that it wouldn't work as is, would need alteration

A Real Professional Fryer!

Pros: Fast warm up and recovery. Vented top is great. User friendly and no mess.
Cons: An amateur cook won't appreciate it.
This is as good as it gets without going to a commercial unit that costs at least twice as much and requires 220 volts and a $4,000 hood. And it has better features. The temperatures are true if you let it warm for at least 20 minutes and add 5 degrees for used oil. I use mine about twice a week and leave the oil in it with a piece of magnetic plastic over the cover vents to keep the oil odor in. It lasts a month and when the oil starts foaming I fully clean the unit and replace the oil. I don't strain, refrigerate and clean the unit with each use and neither do restaurants. If I did, I'd probably get another week between oil changes.
By using reasonable batch sizes this fryer will out perform any other one you have had with great results. If you don't love it, you need to go out to eat.
